Summary: | This work describes the simultaneous determination of three major phenolic compounds found in beer, namely ferulic, gallic and sinapic acids, by means of a BioElectronic Tongue (BioET). The proposed BioET is formed by an array of four voltammetric biosensors, with marked mix‐response towards the involved compounds, plus an Artificial Neural Network (ANN) model able to extract meaningful data from the complex readings, overcoming signal overlapping. The obtained responses were first preprocessed employing the windowed slicing integral method to reduce data dimension and the obtained coefficients fed the ANN model which carried out the quantification. Finally, its performance was successfully assessed with some external test and spiked beer samples. |
