Summary:Molecular modelling has been used to show that branching at the 3-position of every second glucose unit in the backbone of the xanthan molecule does not preclude the backbone from adopting a two-fold cellulose-like conformation. A stereochemically acceptable model of this type is defined with a pitch of 10·51 Å (slightly longer than that of cellulose). This is a model structure for the conformation of xanthan in cooperative interactions with galactomannans, that has been proposed as the molecular basis for the synergistic (gelling) properties of these two polysaccharides in solution.
