Summary: | Crude extracts of borage and evening primrose meals were prepared and fractionated using a Sephadex LH-20 column. Each extract yielded six major fractions (I–VI). Content of total phenolics in borage and evening primrose fractions ranged from 129 to 366 and 158 to 445 mg/g, respectively. All fractions contained both hydrophilic and hydrophobic phenolics. They possessed excellent iron (II) chelating capacities, which ranged from 33 to 100% for borage and 36 to 100% for evening primrose. |
