Summary: | In recent years, the continuous emergence of drug residues, additives, heavy metal hazards, microbial pollution and other problems in food have made people's lives and health face serious challenges, and people's attention to food safety is also increasing. Convenient, rapid, efficient and accurate detection and monitoring of toxic and harmful ingredients in food, timely report and early warning are effective ways to avoid the occurrence of harm.
MOFs-derived porous carbon materials (MPCs) are a new type of functional materials derived from metal-organic framework polymers (MOFs). The porous carbon materials with the same shape and structure as the template can be obtained by using MOFs as a precursor for high temperature carbonization or by introducing small organic molecules into MOFs nanopores. Characteristics like adjustable chemical structure, diverse properties, large specific surface area, uniform pore distribution, strong adsorption capacity and signal transduction ability of MPCs have been get, and widely used in various fields, especially in food industry as adsorbent in the pretreatment step of food pollutant detection and electrode modification materials for electrochemical sensing.
This manuscript focuses on the specific application of MPCs in food safety detection pre-treatment technology and electrochemical sensing, and summarizes its advantages and disadvantages in the detection of pesticide residues, veterinary drug residues, food additives and biotoxins, heavy metal ions and other pollutants, so as to provide more reference for expanding the application scope of MPCs and developing high-level food safety detection methods.
•The research and applications of MOFs-derived carbon in food safety detection are reviewed.•The preparation method, advantages and classification of MOFs-derived carbon are introduced.•MOFs-derived carbon is studied as an adsorbent for various pollutants in food.•Electrochemical sensors based on MOFs-derived carbon for food pollutants detection are studie.•The current limitations and future trends of MOFs-derived carbon in food sector are discussed. |
