Summary:The effects of water on relaxation processes in polysaccharides were investigated by the NMR, adsorption, and comparative methods. It was shown that the relaxation vitrification transition that occurred in polysaccharides during the formation of an adsorption layer about two water molecules thick made the largest contribution to the spin-relaxation processes in the polymer-water system.
