Summary:The results of research on a chemical compound of extractive substances of cedar needles and florence water, which are used in the food-processing industry, are presented. Studies have shown that an extract of cedar needles and florence water contain a significant amount of biologically active components. In particular, cedar needles extract contains 30% of flavonoids, which possess the antioxidant activity; florence water contains a significant amount of α-terpeniol, which shows fungicidal properties.
