Summary:The olfactory receptor protein(ORP) fractions isolated from bullfrogs(Rana sp.) were coated on the electrode surface of piezoelectric (PZ) crystals to form a PZ-olfactory biosensor From the measurement of the headspace gas of sorhum liquor, it was found the Sauerbrey's equation based on frequency decreased (ΔF) could not describe the adsorption behavior, but the slope value(ΔF/ΔT) could be used as the effective parameter to assess the quality of sorghum liquor. The measurement results could be transformed to grade scores that represent the quality of sorghum liquor through executed on SAS statistics computer software.
