Summary:China's fisheries industry has undergone significant development in recent years. In this paper, a valuable source of information on present aquatic product production, processing methods and practices is being provided, and is supported by adequate statistical data. Inland and marine aquaculture have substantially increased fish and shellfish production in the past few years, and modern technologies employed for aquatic product processing are emphasised.
