Summary:The angiotensin converting enzyme (ACE) inhibitory peptides from silver carp (Hypophthalmichthys molitrix) was preparated and the variable factors, protease concentration, hydrolysis time, pH and temperature, were optimized with Uniform Design, a new statistical experimental method. The results improved that the protease I was the best enzyme for preparation of ACE inhibitory peptides from silver carp. The suitable enzymolysis conditions of protease I are given in protease concentration of 25 U/ml, hydrolysis time of 2 hours, pH 7.0, hydrolysis temperature of 60°C, and the ACE inhibitory activity is 90.32% by the predict model, which indicated a close agreement with experimental values. The amino acid composition analysis of the ACE inhibitory peptides improved that it has high percent essential amino acids and the highest content amino acid of glutamic acid.
