description The aim of this study was to optimize the pulses number of the pulsed electric fields (PEF) and the discharges amount of the high voltage electrical discharges (HVED) treatments for the intensification of polyphenols extraction from pomegranate peels. The latter is a byproduct highly produced in the MENA region. Diffusion using PEF and HVED was therefore carried out for different numbers of pulses and discharges, respectively. Although the extraction yields were higher with HVED treatment, both treatments enhanced the extraction kinetics of polyphenols along with their antiradical activities.
