Summary:This article presents an overview of materials on the nutritional value of functional foodstuffs in demand in the diet of a modern person, enriched with oil flax seeds and gymnosperm pumpkin pulp. The article presents the results of a study of the quality and nutritional value of seeds of oil flax “Uralsky” and pumpkin gymnosperms grown on the territory of the experimental field of the FSBEI HE “Smolensk State Agricultural Academy”. The method determined the amount of input enriching raw materials for chicken liver bases.The ratio of proteins and fats in chicken liver and this ratio in the combined basis was studied.Improved this ratio and greater compliance with the requirements of a balanced diet.
