Summary:A total of 34 food service establishments was surveyed in the City of Garland, Texas. Twenty establishments had never been through a comprehensive plan review process, while 14 of the establishments had undergone cornrprehensiveplan review within 24 months of the survey. All 34 establishments were inspected by the same 2-man team of Environmental Health Practitioners (E.H.P. 's). The E.H.P. 's conducting the inspections were totally unaware of the purpose of the survey. The two groups of establishments were compared statistically using total and partial scores as the indicators of degree of sanitation and overall condition. The plan review and non-plan review establishments showed no significant difference in total demerit scores; however, the plan review establishments showed significantly f ewer demerits due to structural and equipment violations than did non-plan review establishments (2.3. vs. 6.0 mean demerits, respectively). Correlation analyses were conducted involving five parameters for each establishment in order to determine f actors which might affect the total demerit score of each establishment. The manager's age, years of experience in the food industry, and total years of education showed no significant correlation with score. Both the seating capacity of the establishment and the number of years since construction or total renovation exhibited a significant, positive correlation with the demerit score.
