Summary:In order to conduct fast detection of biogenic amines (BAs) in doenjang and gochujang, a competitive direct enzyme-linked immunosorbent assay (CD-ELISA) for histamine was compared with HPLC analysis. The histamine contents were determined from 0.7 to 420 mg/kg by CD-ELISA and 2.2 to 382.4 mg/kg by HPLC. Both methods showed a good agreement for histamine analysis (R=0.969). In addition, the histamine contents by CD-ELISA were correlated to the sum of 7 major BAs in the samples (R=0.910), suggesting that the CD-ELISA can be used as a rapid indicator for total BAs in doenjang and gochujang.
