Summary: | Biltekoff talks about food studies. As the food industry doubles down to both assess its practices and--importantly--tell its story, new opportunities may emerge for food studies scholars to make an impact, should they choose to, on an industry that is under pressure and in flux. Beyond impact in this sense, encounters with "the other" can and should give rise to new sorts of critical, but also perhaps productively empathetic, research questions about how various sectors and pieces of the food industry work, and how they change. |
