Microburger biochemistry: Extraction and spectral characterization of myoglobin from hamburger

A biochemistry experiment is presented that provides a simple demonstration of useful biochemical methods. The procedure is designed to be undertaken at one of two levels of complexity, depending upon the instrumentation available for student use and the intended course level.
