Summary:ZusammenfassungIn this work, a metagenomic library in Escherichia coli was screened for clones with β-galactosidase activity. The metagenomic enzymes having high enzyme activity with lactose as substrate were used for hydrolysis of lactose in milk. For comparison, commercial enzyme preparations were used. We found several new metagenomic β-galactosidases, which per form ed the lactose hydrolysis in milk systems much better than any known.
