Quality and Processing Behavior of the Megezhek Breed Horsemeat

The paper represents the results of studying the chemical composition, processing behavior, and safety of the Megezhek breed horsemeat. It has been found that the Megezhek breed horsemeat has a high nutritional value and good processing indicators.
