Summary: | The effect of storage time at a temperature of 8°C on the direction and dynamics of changes in quality traits of eggs was investigated in shelled table eggs obtained from different egg production systems (cage system – CS, barn system – BS, free-range system – FRS). After 7, 14 and 28 d of storage, eggs from each housing system were tested for physical characteristics and for cholesterol content and fatty acid profile in the yolk.
