Summary: | Secondary fish raw materials (skin, bones, etc.) have a high biological value and their processing is a promising direction. The use of biopolymers derived from raw materials of aqueous origin is a promising direction for obtaining enriched food products for the prevention of diseases of the musculoskeletal system. In this work we studied the possibility of isolating sulfated glycosaminoglycans using the enzyme papain. The whey is tested for the destruction of muscle, covering and bone tissues of fish raw materials. The resulting fish-milk mass is used in the manufacture of bakery products. The high biological value of the product and its attractive organoleptic characteristics have been shown. |
