The authors have solved a number of problems, namely, the kinetics of convective and conductive drying of watermelon puree semi-finished product and the analysis of the mechanism of internal moisture transfer during drying. Additionally, the article presents the main technological stages for preparing watermelon for its industrial processing and a schematic diagram of a drying device in which it is possible to implement watermelon semi-finished products drying. The need to identify kinetic patterns of changes in the complex of the main parameters that characterize the dried object during drying is associated with the subsequent possibility to obtain a correct physical and mathematical model of the heat and mass transfer process under study. As a result, based on the analysis of the obtained kinetic regularities of the process of convective and conductive oxygen-free drying of watermelon semi-finished products, practical recommendations are given for the implementation of the research results. In particular, it is established that the rational drying time of the product is a little more than two minutes before it reaches the final humidity of 10%. |
