The ultrasonic instruments are low cost & running cost, repair/maintenance qualified manpower, are also low Therefore, ultrasonic milk analysers are now adopted for determination of fat and SNF content of milk. It is well known that day by day adulteration of milk is becoming very common practice. However, it appears from survey of literature that in spite of possibilities for interference of adulterants in ultrasonic analysis of milk, no work is reported so far to evaluate effect of some common adulterant in milk on performance of ultrasonic milk analyser. The present study was undertaken to evaluate performance of ultrasonic milk analyser in estimation of fat and SNF content in adulterated milk containing added urea. Results of the study indicated that the added urea adversely affected the performance of ultrasonic milk analyser. In presence of added urea % fat and % SNF content of milk were over estimated.
