Summary:At this symposium, 48 papers on various aspects of aquatic off-flavours were presented. In these concluding remarks, the author will try to evaluate the developments in some areas of this field of scientific study. The author's choice of subjects to discuss and his angle of observation are, of course, subjective. Still, the author finds it useful to take as a starting point his introduction to the first symposium five years ago, and to compare it to what has been said at this symposium, reflecting the development of the field in the last decade.
