Summary:Along the coasts of Morocco, the relative wealth in marine algae represents an important source of proteins for animal food. This investigation will attempt to replace soya protein by marine algal protein using Gelidium sesquipedale . The first step in upgrading the residues is the evaluation and extraction of proteins during the different stages of alimentary-agar extraction, particularly to identify the step where proteins are lost and to determine the amino acid composition of these proteins.
