Summary:We report the fabrication of pH responsive switchable emulsions that quickly destabilise at acidic pH, but switch back to the stable state when the pH is neutralized. The pH triggered flocculation is further used to influence the assembly of droplets into predetermined shapes. Such systems, stabilised using natural and non-toxic components, can find important applications in the field of green colloidal structuring.
