Summary:During the ozonation of the triglycerides and unsaturated fatty acids from sunflower oil, aldehydes and carboxylic acids with three, six and nine carbon atoms are obtained, together with hydroperoxides, ozonides and other peroxide species. Some of them present relatively low boiling points, constituting the volatile fraction of ozonized sunflower oil (OLEOZON super( registered )). In the present work, the volatile fraction was characterized by Gas Chromatography - Mass Spectrometry (GC/MS) and Gas Chromatography (GC) combined with three different extraction techniques: gaseous purge with cold trap collection, gaseous purge with Tenax adsorption followed by a solvent elution and liquid-liquid extraction. The volatile fraction of OLEOZON super( registered ) is composed by saturated and unsaturated aldehydes and carboxylic acids. Hexanal, nonanal, 3-nonenaldehyde and malonaldehyde were the main components of the volatile fraction.
