Summary:Broadband dielectric measurements for 86.5, 88.2, and 94.6wt% fructose-water mixtures were carried out in the frequency range of 2mHz to 20GHz in the temperature range of -30 deg C to 45 deg C. Two relaxation processes were observed, in addition to the low frequency electrode polarization and contribution of dc conductivity. The high-frequency process (-process) was observed in the frequency range between 100kHz and 100MHz. The low-frequency process (-process) was observed in the frequency range between 100mHz and 10MHz. The relaxation strength of the -process increases and that of the -process decreases with increasing water content. Even in the fructose-water mixture, the each component do not show the respective relaxation process, i. e., the primary -process results from the cooperative motion of two components and the -process is dominated by the local motion of water molecules.
