Summary:Various ways in which the different sensory aspects of food presentation (e.g., flavor, appearance, portion size, and shape) influence food intake in human subjects within the range of normal body weights are considered. One way in which food sensory properties influence feeding is by contributing to a form of satiety. Research on sensory specific satiety is reviewed along with research on the influence of variety, flavor, and food appearance. Sensory specific satiety reflects the observation that, during the course of a meal, the pleasantness of foods eaten declines while the pleasantness of foods not eaten remains relatively unchanged. Further, the more different the foods, the greater will be the intake inhancement by variety. The successive presentation of foods which vary in flavor or shape also leads to significantly greater intake during a meal. Knowledge of such factors leads to potential means of controlling meal size for individuals having difficulty in body weight regulation. (wz)
