A Polymerase Chain Reaction (PCR) was set up using Italian goose breeds meat and the earlier mentioned product. A zone of the cytochrome b of mitochondrial DNA of goose was sequenced and a specific primer pair was successfully designed to identify the species Anser anser in salami.
