Summary: | In the past 40 years, retail buying -- and people's shopping habits -- have been revolutionized. Christmas dinner highlights many of the concerns over food miles -- the distance food travels from producer to plate. This has allowed supermarket buyers to negotiate very favorable deals with major suppliers on the basis that there will be a year-round market for their produce, wherever it comes from. But it disregards the fact that transporting staple produce thousands of miles when they are widely available for much of the year in the UK is environmentally damaging. However, it must also be said that, like any good business, supermarkets must respond to customer demand. Nevertheless, consumer pressure cuts both ways and all of the major supermarkets have introduced local sourcing policies to meet the demands of an increasingly environmentally conscious public. |
