Summary:Antinutritional factors of anasazi bean were compared to traditional pinto bean (Phaseolus vulgaris L.). Anasazi beans contained less (p0.05) in stachyose and raffinose content were found between the two bean types; verbascose was not detected at all. Significant (p0.05) in inhibitor activity against human and bovine trypsin and chymotrypsin were found between the two bean types.
