Summary:The WHO Global Diabetes Report notes that the number of adults with diabetes mellitus (DM) has almost quadrupled since 1980. As of January 1, 2017, this number was 422 million, which is largely due to the increase in type 2 diabetes. Traditionally, the basis of DM prevention is diet, physical activity and psycho-emotional attitude of a person. The task of the food sector in the prevention of DM is to provide the population with a wide range of dietary products. The functional foods based on medicinal plant raw materials (MPRM) should account for a significant proportion of the diet for people with DM. The population’ awareness of the necessity to keep the diet with all its components, is an important DM prevention measure. The results of 120 respondents survey showed that 92% of them know that diet is one of the basic principles of therapy, 74% strictly adhere to the recommended diet and 8% of respondents eat at random. As for the attitude to special schools for patients with DM, 38% of respondents attend them, 58% are planning to do it, and 8% are skeptical of it. Regardless of the knowledge about the correct diet formation, the analysis of the nutritional value of respondents' diets revealed a shortage of a number of important micronutrients. The aim of the research was to develop extracts from MPRM for the production of functional nonalcoholic beverages with high content of biologically active substances having antioxidant properties. Based on the analysis of specialized literature, ten MPRM products recommended for dietary therapy of individuals with impaired carbohydrate metabolism have been selected. In terms of predicting the projected properties of the drinks, the optimal number of plants in the MPRM product did not exceed five. Extracts from the studied MPRM were obtained by the method of enzymatic hydrolysis. The antioxidant activity (AOA) is mainly due to the content of biologically active substances (BAS), such as phenolic compounds and ascorbic acid. Their content in the extracts was determined. Comparative analysis allowed to select five types of extracts out of ten for further research. High AOA of the extracts was confirmed using the method based on measuring the concentration of malonyldialdehyde (MDA) in biological systems. MDA is the final product of lipid peroxidation (LPO), which is formed in blood serum when interacting with thiobarbituric acid.
