Summary: | The present study investigated the chemical characteristics of edible films made from a modified Désirée potato starch using the heat moisture treatment (HMT) method combined with chitosan as materials for biodegradable packaging. The edible films with the concentration of 1% (w/v) chitosan displayed good chemical characteristics in terms of moisture content (12.10%), ash content (1.14%), fiber content (2.08%), protein content (5.29%), lipid content (1.66 %), and carbohydrate content (84.11%). The findings suggested that the modified potato starch-chitosan edible films may resist additional processing in the manufacture of biodegradable packaging. |
